Chocolate Keto Nuggets (Gluten-Free + Dairy-Free)

These dairy-free Chocolate Keto Nuggets are so delicious and so easy to make. Packed with coconut flakes, hazelnuts, chia seeds, and sunflower seeds, these keto nuggets are a quick snack that is great for sharing.

I created this recipe when my local Costco stopped carrying Innofoods Dark Chocolate Keto Nuggets, and I began to experience what I will call "my snack chocolate is gone sorrow." Well I haven't even needed to check if Innofoods came back in stock, because everyone in my family agrees that they like this recipe better anyway. With only six ingredients, this recipe is super easy and quick, yet it's still impressive enough to share with others.

Important Ingredients

  • Chocolate Chips — Melted chocolate chips is the base for this recipe and is used to hold all of the ingredients together. If you have a Costco near you, they sometimes carry the Kirkland brand of chocolate chips, one of which is dairy-free and comes in a big bag at a reasonable price. Double check the ingredients however, because some Kirkland chocolate chips are not dairy-free. Otherwise, Enjoy Life Chocolate Chips are great as well.

  • Unsweetened Shredded Coconut Flakes – Coconut flakes gives these keto nuggets flavor and texture.

  • Hazlenuts – Hazelnuts provide crunch and flavor to these keto nuggets.

  • Unsalted Sunflower Seeds – Sunflower seeds give bulk and protein to this recipe.

How to Make this Recipe

Melt chocolate chips. In a microwave safe bowl, melt the chocolate on a low power for 2 minutes, checking every 30 seconds. It’s essential to warm chocolate on a low power or it will burn and seize, making it unusable. Stir the chocolate as it begins to melt. If the chocolate is mostly melted with only small chocolate chunks remaining, let the bowl sit on the counter for a few minutes, stirring occasionally until fully melted. If the chocolate doesn’t melt completely, return it to the microwave and heat for another 30 seconds to a minute, always on a low power, until fully melted.

Crush hazelnuts. I like to buy my hazelnuts in bulk from my local WinCo, as they have the best price around, and then I blitz them for a few seconds in my blender till they are ground down to small pieces.

Add all ingredients to melted chocolate. Add the unsweetened shredded coconut flakes, sunflower seeds, crushed hazelnuts, chia seeds, and pinch of salt to the melted chocolate. Stir till well coated in chocolate.

Cool on wax paper. Spread the melted chocolate mixture onto wax paper on a cookie sheet and put in the fridge to cool. It will be ready to eat within 20-30 minutes.

Recipe Notes

Control your sugar content. This recipe has no added sugar other than what is already in the chocolate chips. If you prefer a sugar-free version, try these sugar-free and dairy-free chocolate chips.

Substitutions

Replace Hazelnut. If you'd like to make these keto nuggets without the hazelnuts, try adding pumpkin seeds instead. They will add flavor and texture as well. You could also replace the hazelnuts with another tree nut.

1/2 cup unsalted sunflower seeds
1/2 cup hazelnuts, crushed
2 Tablespoons chia seeds
1/8 teaspoon kosher salt, or sea salt (decrease the amount by a pinch for sea salt)

  • COOL. Spread the melted chocolate mixture onto wax paper on a cookie sheet and put it in the fridge to cool. It will be ready to eat within 20-30 minutes.

  • ENJOY. These chocolate keto nuggets are good for up to 10 days in the fridge.
